I’d say they’d be nice and chewy, but there might indeed be the risk of Salmonella. Maybe just cook 'em a bit longer than the rest.

That’s gotta be some flash frying in order to preserve the the emotional distress displayed on their little faces.

Depends on the place. Alot of shitty (intended) places don’t bother to de-vein/clean the product. Explains why some fried shrimp (in this case fluffies) taste bitter. Though some places do it on purpose cause it tastes good with some cold sake.
