I’d say they’d be nice and chewy, but there might indeed be the risk of Salmonella. Maybe just cook 'em a bit longer than the rest.

Depends on the place. Alot of shitty (intended) places don’t bother to de-vein/clean the product. Explains why some fried shrimp (in this case fluffies) taste bitter. Though some places do it on purpose cause it tastes good with some cold sake.
