My cat has learned all our code words for “treat”, and also the spellings, or so it seemed. Then I realized she just reacts to me spelling anything aloud because she thinks I’m hiding treats from her. I’m fairly sure she doesn’t know what letters mean, but the cadence and sound is different, and we stop using words she can understand at suspicious times. So she may as well know how to spell. 
My parents old cat has learnt to recognize the word “veterinären” (meaning “the veterinarian” in Swedish). Though this might be since he’s been quite accident-prone and has hurt himself several times; thus ending up at the vet.
